Developing a New Dining Facility – Design, Reality, Lessons Learned 

Morgan State University, an HBCU, is known for preparing diverse and competitive graduates for success in a global, interdependent society. To be successful, one must feed both the body and mind.  Join members of the team that developed the new Thurgood Marshall Dining Hall for the morning to get a behind the scenes look at the state-of-the-art facility, hear from designers/architects/members of the planning team about the process and why certain decisions were made, then get an overview of the first 6 months of operations and what has been learned. A valuable experience for anyone who may have a new build or renovation in their future.

Join experts from Pizza University and pizza aficionado, Matt Obergfell, as we take a deeper dive into the current trends in pizza. We will explore flavors, toppings, unexpected places pizza is showing up, and spend some time on how to take your pizza program to the next level. Experts will get into the details of how to make a better pizza, how to make it faster, and how to set your operation up for pizza success. 

 

 



Catering and Large-scale Bulk Cooking at the Yards 

 

Camden yards

Spend some time with chefs that work at the most iconic ballpark in the US for a tour of Camden Yards kitchens and prep facilities. Learn what it takes to make baseball fans happy and well fed. This session will highlight equipment and processes that help turn organized chaos into happy customers. 

 

 

 

 

 

 

 

Food Hall and Marketplace Models – A Visit to Lexington Market 

Visit the Lexington Market in Baltimore and walk away with a better appreciation of food hall and marketplace models, an understanding of how community can tie into the operation, and an overview design considerations. Attendees will learn about this historic market, the community collaboration, and how the major renovations came to be. Take a behind the counter tour of some of the stalls and meet current vendors. There will be discussions with the developer, architect firm, and others that worked on this project…plus time to explore and shop!

This session will feature several teaching kitchen experiences where we share ways to add international favorites to your menu, providing students who are far from home, a sense of belonging and community.  Interact as you prefer; you can participate with a hands-on session or just watch, mingle and come for snacks.
