Welcome to the University of Minnesota Duluth (UMD) Dining Services Tour! This two-hour experience highlights the impressive renovation of our Main Production Kitchen, originally built in 1971 for 800 students, now designed to serve up to 9,000 students and 3,000 staff and guests.  

The remodeling journey was complex, lasting two years and involving extensive planning and collaboration among campus stakeholders, designers, and builders. Challenges such as leadership changes and evolving needs were met with strategic solutions, including design charrettes to ensure all voices were heard.  

During construction, UMD Dining creatively maintained operations from temporary workspaces, showcasing their commitment to quality service. Sustainability is also a priority, with 100 percent compostable packaging and 70 percent of freshmen participating in reusable programs. After the tour, enjoy a delicious lunch prepared by our dining team and network with UMD Dining professionals. This project exemplifies the importance of thoughtful planning and resilience, providing valuable insights for your own dining programs. Join us to learn and be inspired!
