Works with dining director, assistant directors, dining managers and supervisors, staff and students on areas related to wellness and nutrition. Includes but not limited to: nutritional analysis of recipes/menus; assist with monitoring CBORD NetNutrition program; train FT and PT staff on proper food handling techniques for food allergies/gluten free diets; special diet consultations with college students and liaison with dining managers/Assistant Directors; training coordinator/facilitator/preceptor for year-round internship programs; develop and implement staff wellness programs; assist in development of annual nutrition education programs/materials; KU Dining representative for campus committees relevant to nutrition and wellness.


SUPERVISON RECEIVED & GIVEN:  Receives direct supervision from the Director of Dining. Works collaboratively with dining managers and support staff in KU Dining. Supervises and evaluates System Administrator. Assists dining managers/supervisors in monitoring staff working in allergy-friendly concepts.



Financial Responsibility

Request special equipment and/or small wares for units

Assist in procurement of special diet products via vendors and/or local grocery stores.

Responsible for writing residential dining center menus.

Ensures menus are costed to meet food cost budgets.

 Managing People

 Manage the work of System Administrator who oversees menu management program.

Plan, coordinate, and facilitate any approved annual internship programs.

Liaison with dining staff and other campus partners overseeing the performance of student interns.

Assist managers in overseeing staff training and implementation of special dietary needs adherence.

 Food Quality Management

 Primary contact for students (and/or parents) with medically diagnosed/documented special diets.

Inspect dining units periodically to ensure adherence to food allergy/GF diet guidelines.

 Managing Customer Focus

 Schedule and facilitates both full & part-time employee training related to special diet/food allergies.

Create sessions/programs for dining services staff on nutrition and wellness topics.

Collaborate with KU Dining’s affiliates and partnerships with campus departments with education and wellness events. 

 Achievement Focus

 Coordinate monthly sessions/communications with unit managers as a reminder to staff about importance of food allergies/GF diet practices.

Liaison with Academic Achievement and Access Center (AAAC). 

 Business Ethics

Inspire the trust of others while working with integrity and treating all with respect and positive communication.

Keep commitments towards assignments while being a role model leader in KU Dining Services.

Oversee confidential record keeping, storage of records and adherence to FERPA rules. 



Serve on departmental, university or professional association committees and task forces as assigned.

Prepare reports and special projects as required/assigned.

Serve on KU Dining Leadership Team and participates in long and short range planning for KU Dining in accordance with the strategic plan.

Participate in webinars/conferences/professional association meetings.

Follow department policy for requesting/purchasing training materials.

Serve as liaison between students/parents and dining mangers.

Perform related duties as assigned by direct supervisor/director.




Ability to set policy and procedures to effectively and efficiently initiate the program.

Proven customer service experience with specific regard to dietary consultation

Knowledge through experience and/or training of menu construction and recipe writing.

Computer knowledge/proficiency in Microsoft applications

Working knowledge of menu management system, preferably CBORD FSS.



Registered Dietitian

Bachelor’s Degree in Dietetics, Nutrition, or related field

Minimum one-year experience in field

Experience in facilitating orientation and/or training sessions

ServSafe certified or the certified within six months of hire.



Previous experience supervising salaried staff.

Nutrition analysis systems such as Net Nutrition

Professional, thorough and effective communication skills

Proven organizational skills and ability to prioritize

Demonstrated enthusiasm for nutrition and wellness in collegiate dining

Demonstrated ability to be creative and innovative in a fast paced higher education environment

Ability to work with minimal supervision

Demonstrated sound judgment in decision making
