Purpose
To provide administrative and supervisory assistance to the Dining Unit Manager in the planning and operation of the food service unit within University Housing and Dining (UHD). Assists in the planning of menus, food purchases, and inventory control of food supplies. Provides support and partnership to the Dining Unit Manager in such areas as full and part-time staffing, pricing, cost control of food items, and training of new and current employees to include Supervisors. Provide 5-star experience to internal and external customers.
Responsibilities
Assist the Dining Unit Manager in recruiting, training, planning, directing, administering programs, policies, developmental activities (evaluations and disciplinary action), and procedures in regard to all employee categories including but not limited to full-time employees, 32-hour, student employees, and temporary workers.
Ensure proper food production handling and holding of products, methods of preparation, sanitation, and inventory accounting. Plan and promote a clean and safe operating environment for employees and customers ensuring all HACCP guidelines are followed.
Establish and implement product ordering system for retail and/or residential business, monitoring product movement to maximize efficiency and customer satisfaction. Take weekly and monthly inventory and perform weekly inventory analysis. Verify deliveries and ensuring products meet UHD specifications. Utilize computer inventory system and/or food production system (Food Pro) to record production records and forecast product needs.
Assist in managing the cash room and time records including but not limited to full-time employees, 32-hour, student employees, and temporary workers using all UHD and temp agencies time reporting systems including Workday & TimePro.
Ensure proper operation and maintenance of all facilities and equipment. Report operational inefficiencies to leadership and submit work orders when applicable. Request and acquire new or additional equipment as needed. Other related functions as assigned.
In conjunction with the marketing team and unit leadership, develop and implement ongoing promotional and advertising activities. Maintain point of sale system (POS) including menu boards and TV monitors and communicate daily marketing specials to staff.
Required Qualifications
Bachelor's Degree in business, food and nutrition, or a related field.
At least 2 years of management experience in a restaurant, commercial, or institutional facility.
Experience with operating a standard kitchen.
Ability to complete and maintain Food Safety Training required by University Housing and Dining.
Ability to complete and maintain University Housing and Dining cash handling training.
Relevant education and experience may be substituted as appropriate.
Preferred Qualifications
Three years or more of supervisory/management experience in food service or a similar capacity.
Five years or more of food service experience in a commercial or institutional facility.
Experience working in a large university dining setting.
Experience training, coaching, and evaluating staff in a high volume/fast-paced food service environment.
Experience managing labor and food cost.
Experience maintaining inventory control.
Bilingual in Spanish and English.
Experience using Microsoft Office and computer systems.
Strong organizational skills.
Professional demeanor and ability to work with a large customer base.
Salary Range
$58,000 + depending on qualifications
