UMD Menu Design & Wellness Manager


Overview:

Menu Design & Wellness Manager will support the process of continuous menu design in support of health and wellness. The candidate will collaborate with fellow stakeholders (including Disability Services, University Health Services, Information Technology Department, Athletics, and more) to design menus in response to dietary accommodations. The candidate will also play an integral part in team based projects with regards to enhancing new and current systems keeping in mind nutrition and wellness. The Menu Design & Wellness Manager must hold current accreditation as a Registered Dietitian and will serve as a nutrition expert regarding food allergies and ingredient sensitivities, religious preferences and meets other dietary needs.


MENU MANAGEMENT & DESIGN 40%

Assists with operations in menu planning, standardization of recipes, product placement and pricing strategies that support health and wellness on campus

Assures that all menus meet nutrition requirements as established by budgetary standards, production limitations, food delivery system needs while keeping in mind UMD Dining's core values

Provides nutritional recommendations during new product procurement, recipe development and recipe tastings

Communicates with suppliers and distributors to ensure the specifications are accurate, complete, and compliant with regulatory guidelines

Prepares menus for forecasting three weeks in advance by incorporating special events and finalizing the weekly menus with accuracy

Maintains rigorous labeling procedures for special diets (vegetarian, vegan, gluten free, Halal, etc.), healthfulness, nutrition information and food allergies, and work with both the procurement and marketing team to ensure they are being used accurately

Conducts food allergy training for employees regularly on food allergy & celiac disease management and prevention

Conducts investigations of food allergy reactions and foodborne illnesses. Research food allergy reactions and update policies and procedures as needed.


SUPERVISORY/LEADERSHIP 30%

Serves as functional role in team-based projects with regards to enhancing new and current systems keeping in mind nutrition, health & wellness

Supervise one Department Assistant and a team of student nutrition interns for the purpose of maximizing the productivity of the work force and ensuring adherence to accuracy in menu management, nutrient analysis, and health & wellness

Engages in opportunities with industry partners at the local, regional, and national level to support and growth and continuous evolution of the department's core values

Oversees nutrition interns in creating nutrition education materials for individuals on UMD Dining's social media outlets

Supervises dietetic interns and create a program that meets their Food Service Management requirements under the American Dietetic Association


COUNSELING/WELLNESS 25%

Provides support and assistance to students who have special dietary needs, food allergies or who want to maintain a healthier lifestyle; Provide nutrition consultations as referred or create personalized menus and recipes

Works with culinary team to ensure students' dietary needs are being accommodated and arranges for specially prepared meals, purchase of packaged foods or sourcing special requests when the daily menu offerings do not meet their needs

Creates and updates a Standard Operating Procedures (SOP) for retail and catering operations regarding policies and procedures on food allergies and special diets

Collaborates with Student Disability Services and University Health Services for proper student registration and medical documentation as it pertains to meal plan exemptions and accommodations

Provides individual tours to students and parents to familiarize them with the dining locations and to identify options related to their specific condition

Follows HIPAA and FERPA guidelines throughout the entire nutrition counseling process

Develops and implements education materials and programs for individuals and student groups regarding nutrition, meal planning, health and wellness


OTHER 5%

Plans and leads the Nutrition Sessions at designated events on campus

Provides insight on other research studies or projects for UMD Dining Program

Performs related duties as assigned or required to meet Department, Executive Area/Division, and University goals and objectives
