The Registered Dietitian is the division’s subject matter expert and works with the division’s leadership team to promote and provide nutrition counseling and programs across all culinary areas.

  • Provides nutrition counseling and medical nutrition therapy for residential students and associated family members.
  • Leads allergen identification and labeling process for CS operations.
  • Identifies, develops, and presents/promotes nutrition education and other initiatives for Culinary Services while coordinating with others across campus as needed.
  • Researches new products, laws, regulations, etc. for the purpose of recommending purchases, contracts and maintaining services.
  • Develops long and short range plans for the purpose of expanding the program and/or ensuring that resources are effectively utilized.
  • Interacts and collaborates with other MSU dietitian/nutrition colleagues and campus constituents to provide nutrition education and training support to the campus community.
  • Coordinates nutrition marketing efforts with the CS marketing and Farm to Campus coordinators.
  • Supervises a full time dietetic aide and up to 4 student employees/interns.
  • Performs a variety of administrative tasks in support of nutrition program.
  • Assists management in recipe and menu development.
  • May act as preceptor for dietitian students completing their RD programs.
