On August 22, 2024, Florida Fresh Dining unveiled our newly renovated dining hall- closing a chapter on two years of thoughtful planning, marketing and collaboration. The Eatery at Broward is the University of Florida’s centrally located, most-visited location. But its shortcomings became apparent as more students joined our on-campus dining community. Lack of seating, no contained allergen-free prep and a claustrophobic floor layout all hurt the Broward experience.
Our students deserved a renovation, and we began planning — with their needs and desires in mind. Each element of the process incorporated student feedback at the forefront.

University of Richmond

When the Passport Café opened in the Carole M. Weinstein International Center in 2010, it was projected to have 250-350 daily transactions. Since the beginning, the café has consistently exceeded these numbers and now does those counts at breakfast alone. After mobile ordering was introduced, sales increased again, and staff found they needed to adapt service space to manage mobile pickups. Despite these shifts, the internationally themed café had not been updated since its opening. Renovation goals included reconfiguring service space for increased sales, mobile pick-up, merchandising behind the line, and a refresh of seating and finishes.

Cal Poly State University

The renovation of the 1901 Marketplace was envisioned as a key component of the Campus Dining Master Plan, which was developed in 2014. To bring this vision to life, Campus Dining partnered with Associated Students Incorporated (ASI) to create a cohesive and collaborative neighborhood experience within the University Union. The renovation of Cal Poly’s oldest active dining facility, Building 19, played a central role in this transformative effort.

Carleton University

Carleton anticipates an increase in its student population, which necessitated a full renovation and expansion of the Teraanga Commons Dining Hall. The project saw multiple departments at Carleton and external stakeholders work collaboratively to bring to fruition a world-class, cutting-edge All-You-Care-To-Eat dining facility. It now features an extensively varied four-week menu cycle devised by our Senior Executive Chef and the wider Carleton community that emphasizes innovation and cultural diversity. The project was delivered on-time and on-budget and has established itself as a shining example for other post-secondary institutions to follow.

Colorado State University

In the Fall 2022 semester, Durrell Dining Center at Colorado State University (CSU) opened as a multi-until retail operation as a direct response to trends and customer dining preferences exiting the COVID-19 pandemic. In 2022-23, CSU Residential Dining administrative and Durrell Dining Staffs worked through the challenges of converting an all-you-care-to-eat (AYCTE) dining center to a retail facility. From proper staffing levels to implementing reusable containers and communicating the changes to students, staff, and faculty, the first year was a growth opportunity for our entire program.

Byte is a groundbreaking dining concept that reimagines the way students experience food. It brings together 10 unique "ghost" kitchen dining concepts, each offering a different culinary experience, all housed under one roof. Using a smart locker system, customers can order from a kiosk or through the GrubHub app on their smart phone. Their meals are delivered directly to individual lockers for convenient, contactless pickup. This innovative approach allows food lovers to enjoy a wide variety of flavors without leaving the location, providing a dynamic and efficient way to satisfy diverse tastes in one location.

Unique, local, authentic—at Carolina Dining Services, these values guide everything we do. At the University of North Carolina, Chapel Hill, we strive to create a seamless and sensational dining experience for our Tar Heels. Located in the heart of the medical campus, the Beach Cafe serves over 1,200 medical students, faculty, and staff daily, continuously evolving based on student feedback. Featuring beloved local restaurants, it offers a diverse range of cuisines—from Mediterranean and Peruvian to Indian, Argentinian, and classic American. By listening to our students, we ensure the Beach Cafe remains an ever-changing, student-driven dining destination.
