Keynote: The Leadership Mindset

Let’s be honest: not all team leaders and managers currently have the skills to lead effectively, yet leaders have a tremendous impact on your organization...for better or worse. Effectively equipped, they engage employees and set the stage for greater morale, collaboration, creativity, and productivity. In fact, decades of research show that skilled management (whether you're a project manager, team lead, team manager, or senior executive) is essential to the overall health and vitality of an organization.

In this workshop we explore how managers can effectively create healthy workplaces by focusing on workplace morale, emotional IQ, the Top 15 Management Skills (according to research!), and psychological safety.

Michael brings with him a wealth of experience (over 30 years) helping organizations and leaders achieve results. He brings to his work a combination of intelligence, creativity, innovation, humor, and a collaborative spirit, and has assisted over 100 organizations move toward greater excellence and success.

Husky Grind Coffee Program

Learn about UW Dining’s Husky Grind Coffee Education Program – tour our mini-but-mighty café, roasting facility and join us for a coffee cupping – a professional tasting technique to evaluate the coffee quality, flavor and aroma. Perfect for coffee lovers and curious beginners!

Ryan Jongeward is a multi-disciplinary coffee professional and Food Service Manager with over 18 years of experience in coffee, in addition to side jobs in numerous kitchens over the years. Ryan has spent the past four years working within the Markets and Specialty Cafes portfolio as Coffee Roaster and Educator for Husky Grind Coffee through Housing and Food Services at the University of Washington. 

Jeremiah Trammell, assistant director, Markets and Coffee Roasting

Jeremiah Trammell is the Assistant Director of Markets and Coffee Roasting and oversees the Coffee Education program for the University of Washington Dining. He has worked in the coffee industry since 1995, holds Coffee Roasting and Barista certifications, and has been at the UW since 2001, managing cafés and retail markets on campus. He leads the Husky Grind Coffee and Education program, which includes managing a cupping lab, green buying, roasting, training, and café operations. With a focus on traceable micro-lot and smallholder cooperative coffee, the program emphasizes living learning experiences outside of the classroom for student residents. 

From Plate to Promotion: Elevating Student Dining Through Strategic Marketing

Lora Marini Baker, director of marketing & communications, University of Washington Housing & Food Services

This session focuses on strategic marketing and tactics to enhance the student dining experience. Highlighting collaboration between dining operations and the marketing team, Lora and Kelsey will share creative techniques, disclose useful insights to promote engagement, and design an elevated dining experience for our student residents (as well as for the rest of the UW campus community). 

Lora Marini Baker joined University of Washington Housing & Food Services as Director of Marketing & Communications three years ago. She’s new to higher-ed, but not new to leading marketing campaigns and teams. Lora spent most of her career working in the for-profit Broadway industry, managing marketing for touring musicals in seven cities on the west coast. Prior to joining UW, Lora worked for a global non-profit social services organization and managed philanthropy marketing in the Pacific Northwest. A long time ago, Lora lived on campus for four years at Bowling Green State University (Ohio) and is still BFFs with two women she met in the dorms.  

Kelsey Hutchinson, dining operations marketing specialist, University of Washington Housing & Food Services

Kelsey Hutchinson joined the University of Washington Housing & Food Services in a newly created role in 2024 as a Dining Operations Marketing Specialist. She has extensive marketing experience in hospitality, dining, and destination marketing. Prior to joining UW, Kelsey held operational and marketing roles, managing campaigns, events, and guest experiences across hospitality and tourism brands. Kelsey holds a Master of Arts in Communication Leadership from the University of Washington. 

Replacing an on-campus Franchise with an In-House Pizza Program – the UW Pizza story

Jon Biltucci, associate director of dining, University of Washington

During the Summer of 2025, UW Dining was presented with, and explored an opportunity to move quickly to make changes to the pizza program on campus. In this presentation, we will share the details about UW Dining’s recent transition from a regional pizza franchise to an in-house produced program. We’ll discuss the reasons we made this change, the goals, and our approach to launching the program on an abbreviated timetable. We’ll also discuss the steps we’ve taken to solicit and capture feedback, including strategies to engage the campus community as we evolve the program over its first two years.

Jon Biltucci is the Associate Director of Dining and serves as the leader for residential dining facilities and retail restaurants on campus. With nearly twenty years in higher education food services, Jon has supported various leadership roles and has been part of the University of Washington team for four years. 

Nick Contreras, manager, University of Washington Dining

Nick Contreras, Manager for UW Dining, started his journey with UW Dining as a student and has served as a dining leader for over five years. Nick has served in a variety of roles in coffee and pizza franchise brands and residential dining portfolios.

Eliot Norris, assistant campus executive chef, University of Washington Dining

Eliot Norris is a graduate of Culinary Institute of America and has worked in various roles in higher education food services and hotel industry, including management of UW Athletics Dining facility, as well as leadership of Kent State University food services. Eliot currently serves as the Assistant Campus Executive Chef for UW Dining and leads efforts related to procurement, recipes, nutrition, safety and inventory. 

District Market – Oak Tour

Joshua Hodge, general manager, markets and coffee roasting, University of Washington

This 45-minute session is an active tour of District Market – Oak, UW Dining’s north campus full-service grocery store.  District Market offers fresh produce, a full-service deli, chef-prepared sides and salads, hot foods, grab-and-go products, and a variety of convenience items designed to support the daily needs of students and the campus community. 

During the tour, we will highlight District Market’s operations, procurement, and pricing strategies, and how the market supports the broader UW Dining residential experience. 

The session will also include a stop at Denny Café, which serves as a key residential café location that offers coffee from Husky Grind, UW’s on-campus coffee roaster.  Guests will learn how the Husky Grind program integrates locally roasted coffee into campus Market operations and contributes to the overall dining experience at UW. 

Joshua Hodge is General Manager with the Markets and Coffee Roasting program and oversees District Market – Oak. Over the course of his career with UW Dining, he has worked across many campus dining concepts including express markets, cafés, franchise brands, and both retail and residential dining locations. Josh is particularly interested in how retail strategy, data analysis, and brand identity come together to support successful and sustainable campus dining operations.

California Avocado Flavor Pairing (GE)

Chef Thomas Horner, owner, Misty Clover Farm 

In this chef-guided, interactive tasting exercise, we’ll use aromatic compounds as our guide to explore the flavor synergies between California Avocados and fresh spices and seasonings.  Attendees will learn to build craveable flavor combinations with California avocados as the foundation, opening up a world of innovation ripe for the spring season. By applying our senses “wine tasting style” to smell and taste each element on its own and then in combination, we’ll discover how these building blocks of flavor can combine to great effect.

 

Tour of Center Table

This 45-minute session is an active tour of Center Table, UW Dining’s largest residential dining facility. Offering eight innovative food stations with dynamic and rotating menu options, including regional cuisines and specials, build-your-own pasta and salad bar, market deli, house-made pizza, coffee and beverage kiosk. This dining facility tour highlights our offerings, including UW Dining’s Big 9 allergy-free concept, current marketing strategies and partnerships with our student residents.

Robert Bickham

Director of dining, University of Washington

Robert Bickham has led UW Dining as Director since 2019, bringing more than 25 years of experience across hospitality, higher education, multi-unit food service operations, financial consulting, and marketing. He oversees one of the largest self-operated dining programs in the region; thirty diverse locations across the Seattle campus generating over $55 million in annual revenue. Driven by a commitment to exceptional guest experience, Robert focuses on evolving and elevating dining at UW through thoughtful innovation, and consistently great service. Under his leadership, UW Dining encompasses a wide range of operations, including residential and retail dining halls, grocery markets, cafés, franchise concepts, a coffee roastery, restaurants, a commissary kitchen, fullservice catering, and the athletes’ training table.  

Josh Gana, Ed.D.

Assistant vice president for student life and executive director of housing & food services, University of Washington

Josh leads a comprehensive program serving more than 9,500 students and employing over 500 staff. He brings more than 20 years of housing, dining, and residential life experience, with leadership roles at Gonzaga, Washington State, and Oregon State universities, and has been an active contributor to the field through board, leadership, and faculty positions with the Association of College and University Housing Officers–International (ACUHO-I) and its regional affiliate. Josh earned his Doctor of Education in Organizational Leadership from Northeastern University and serves on the nonprofit boards of Emergency Management Group–Washington and the U District Partnership in Seattle. 

Aaron Shook, CPCE

Director of auxiliary and business services, University of Puget Sound

Aaron Shook is deeply rooted in the food and beverage industry and has a passion for creative hospitality. As General Manager and Area Director of Food & Beverage for Columbia Hospitality Aaron oversees Auxiliary Services operations for the University of Puget Sound as well as several other projects in the Puget Sound region. Beginning his career in the Heart of the House as a dishwasher, Aaron has spent more than 35 years helping hospitality organizations grow and thrive.

In addition to his work with Columbia Hospitality, Aaron is also co-owner of Perfect Storm Moments, a premiere event planning and design company in the PNW. Aaron is a Certified Professional in Catering and Events (CPCE), holds a certificate from the Events Industry Council (EIC) as a Sustainable Event Professional, is a past President for the Seattle Chapter of the National Association for Catering and Events (NACE), and served as Vice Chair for the Washington Hospitality Association’s (WHA) MSC board for 3 years, and currently serves as Director of Membership Retention for the Seattle Chapter of WIPA. 

Aaron graduated from City University of Seattle on the Dean’s List with a bachelor degree in business administration, with an emphasis on sustainability. He also graduated with honors from Cabrillo College in California for an associate degree in health and nutrition.  

Megan Underwood

Associate director for resident dining, Washington State University

Megan Underwood is the Associate Director for Resident Dining at Washington State University, where she oversees multiple residential dining centers, espresso operations, and retail concepts serving the WSU campus community. Originally from Idaho, Megan began her career in the hospitality industry as a chef working in resorts and Fine dining restaurants. Her passion for food and leadership eventually led her into higher education dining, where she discovered the opportunity to impact student and community life through hospitality. Over the course of her career, she progressed through roles including Executive Chef, Operations Manager, Director of Retail, and General Manager in Dining Services in the Universities segment. Megan brings a chef’s perspective to operational leadership and is passionate about mentoring emerging professionals while building teams that deliver exceptional dining experiences for campus communities.
