Program Description

Gettysburg College will be hosting a one-day Cultivating Your Culinary Skills workshop along with the 2019 Mid-Atlantic Culinary Challenge. The program invites up to 120 operations production staff from local or regional colleges/universities to learn about menu planning, product procurement, and the customer dining experience. The 2019 Mid-Atlantic Culinary Challenge will identify an award winner to send to the national culinary challenge in Denver, CO in July 2019.

Learning Objectives

After completing the workshop, operations staff will be able to:

  1. Define menu planning and describe key considerations for successful planning and implementation (e.g., cycle length, menu variety, capacity requirements, and service options).

  2. Define food procurement and describe several key considerations such as growing seasons, sourcing, special order items, product storage, and the role of technology in managing a well-run food production system.

  3. Identify the strategic processes and activities employed (e.g., food presentation, appropriate serving utensil selection; and responding to special requests for allergy and nutritional information) to positively impact the customer experience in their dining facilities.

Registration is now open to the first 120 college/university participants. Receipt of a completed registration form with payment will secure your seat.

Travel and Lodging

Participants will need to cover their own travel and secure their own lodging if they plan to stay overnight.
