The Chef of Culinary Excellence, Campus Dining is a key member of the Campus Dining Team within the Division of Administration at Vanderbilt University. The Chef of Culinary Excellence is responsible for executing the culinary vision, innovation, recipe development, menus and product development for Vanderbilt Campus Dining.This position provides leadership in menu management, maintenance of Dining’s recipe database and accuracy of sustainability, nutrition and allergen information.This position develop and oversee the process for engaging Dining’s culinary leadership and staff in menu development and takes leadership of special projects as assigned. Reporting directly to the Executive Chef, this position is responsible for assisting unit culinary staff and plays a large role in supporting productive employee relationships which embrace sustainability and influence a positive team environment.

Our Dining program is highly decorated, the winner of many prestigious awards in the food service industry, including Best On-Site Food Service Operation in the Nation, Best Food Service Operator, the prestigious Ivy Award, and many more. We have main dining centers, restaurants and cafes, convenience stores, and we employ over 300 employees.

Duties and Responsibilities

  • Supports the Fusion food management system that is used throughout Vanderbilt Campus Dining including; ingredients, recipes, menus, menu costing, inventory, ordering and receiving.
  • Works with Operational Excellence team members to ensure Fusion database is up to date and accurate.
  • Oversees menu and recipe compliance across the operations.
  • Develops and oversees the process for engaging Vanderbilt culinary team members in recipe and menu development.
  • Leads recipe testing and new product tastings, engaging the Vanderbilt Culinary team as appropriate.
  • Identify opportunities to enhance the quality and cost of food purchasing and make recommendations to senior management.
  • Works in the field with managers in dining halls, retail operations, and cafes to ensure recipe compliance and excellence.
  • Trains, develops and motivates culinary staff to meet and exceed established food preparation standards on a consistent basis.
  • Identifies the developmental needs of kitchen staff and provide coaching, mentoring, and helping them to improve their knowledge or skills.
  • Teach preparation skills according to defined recipes and follows up with management to discuss ways of constantly improving the cuisine on campus.
  • Assesses culinary training and development needs for the Vanderbilt Culinary team. Develops and delivers coursework to team members in writing and through training sessions.
  • Leads process for evaluation and testing for culinary hiring and promotional opportunities.
  • Establishes systems and processes to ensure quality assurance and product acceptability in all Vanderbilt dining operations.
  • Fill-in during the absence of Executive Chef.
  • Reviews comment cards and online reviews for guest satisfaction results and other data to identify areas of improvement.

Required Qualifications

  • A high school diploma or GED is necessary. An Associate’s degree from an accredited higher education institution with specialized training in Culinary Arts is preferred.
  • 5 years of related culinary management and experience in developing a quality food program in a restaurant or hospitality environment is necessary.
  • ServSafe Manager certification within 30 days of hire is necessary.
  • AllerTrain U certification within 30 days of hire is necessary.
  • Strong record of business judgement including financial and personnel management is necessary.
  • Previous operational experience with a variety of food service applications and computerized menu management systems is necessary.
  • Ability to learn and adapt to new systems and applications is necessary.
  • Proficiency in Microsoft Office applications (Word, Outlook, Excel) is necessary.
  • Strong communication (verbal, written, interpersonal) skills and an ability to communicate effectively with a diverse population is necessary.
  • Ability to meet multiple deadlines and manage competing priorities is necessary.
  • Good professional judgment and ability to independently make sound business decisions is necessary.
  • Ability to frequently adapt to change and ability to remain calm in stressful situations is necessary.
  • Operational knowledge of industrial kitchen equipment (dishwasher, oven, ventilation systems, etc.) is necessary.
  • Strong communication (verbal, written, interpersonal) skills and an ability to communicate effectively with a diverse population is necessary.
  • Strong time management, organizational and multi-tasking skills and an eye for detail is necessary.
  • Manage people, maintain confidentiality and be accountable for Vanderbilt assets is necessary.
