Reporting to the General Manager or Assistant Director responsible for the management and operation of one or more food court outlets featuring National QSR, Fast Casual Restaurants and self branded outlets with yearly revenues in excess of 5 million dollars and yearly off premise catering revenues in excess of $600,000.

Required Qualifications

Bachelor’s Degree in Restaurant Management. Business or Related Field. ADA or FMP certification preferred and 4 years Of High Volume Food Service, QSR or Fast Casual Restaurant, Catering or Concessions management experience. Additional experience may be substituted for the degree.

Expert knowledge of food safety and HACCP. Strong knowledge of the principles and procedures of food and beverage preparations (alcoholic and non-alcoholic) preparation, service, ordering, storage and service and the principles of food safety and cash handling (including PCI compliance). Ability to lead, train, evaluate and motivate a diverse work team. Strong verbal and written communication skills, marketing skills. Knowledge and strong skills; in the sales marketing and logistics of OFF Premise Catering, including multi-day events; ability to effectively implement franchise systems and procedures (Including social media) and great interpersonal skills. Skill and ability to read and interpret recipes, budgets, sales trend data and financial reports; to control inventory and costs; to schedule staff; to operate a variety or computers and cash registers, to use food production, inventory, ordering and HR software.

Ability to promote operations, develop new concepts and organize the logistics of large scale events. Basic knowledge and skill of the set up, marketing and service of special events ranging from Ice Cream Socials to Full Bars.


Management experience with national QSR or Fast Casual restaurant franchise preferably Chick-fil-a, Qdoba, Subway, Starbucks, Sbarro or other high volume quick casual restaurant. NRA Serv Safe Trainer and Proctor Certification. TIPS Trainer certification.

Must have or obtain within 90 days of hire and maintain throughout employment, a current Prince Georges Food Service Manager Certification; a TIPS (or other alcohol beverage awareness certification approved by the Comptroller of Maryland) Certification and a Maryland State Fire Marshall approved Crowd Management Certification. Must have successfully competed corporate required management training within 90 days of hire. This will require overnight travel for periods of up to three weeks per franchise, which will be paid for by Dining Services.
Must have and maintain a driver’s license valid in Maryland with less than 6 points and be able to drive a variety of vehicles from vans under 10,000 pounds to golf carts.
