Organization Details

Columbia is located 120 miles west of St. Louis and 120 miles east of Kansas City on Interstate 70. The University of Missouri has a student population of approximately 34,600. Campus Dining Services has total sales of 24 million dollars and includes 29 operations including residential dining; national, regional, and self-branded retail shops; convenience stores; coffee houses/cafes; University Club and University Catering.

Responsibilities

RESPONSIBILITIES: Assists in effectively directing the daily operations in a unique and dynamic college dining facility. Reports to the unit manager. Establishes and maintains good relations and communication with customers; trains, supervises, and evaluates employees; plans work schedules and procedures to insure the timely production of menu items and dining room services; utilizes computerized food production system to monitor food costs and production; evaluates and assists in the recommendation of menu items; orders food and supplies; recommends new equipment purchases and dining facility renovation; assists in planning and implementing annual budget; and assists in departmental policy development, strategic planning, and decision making.

Required Qualifications

QUALIFICATIONS: A bachelor's degree in dietetics, food and nutrition, hotel, restaurant and institution management, or related area, or an equivalent combination of education or experience from which comparable knowledge and abilities can be acquired is necessary. Preferred: Registered Dietitian with one or more years of supervisory experience; quantity food service experience, preferably in college and university dining; related retail experience for retail dining position. Or, an associate’s degree in culinary arts or other food-related area, plus two to three years of experience in food service, with demonstrated culinary skills and certification from the Culinary Federation Education Institute.

Technical skills required: Thorough knowledge of food service principles and practices; understanding of staffing, equipment utilization and cost control management; effective communication and training skills; ability to meet frequent deadlines in an organized fashion; and an ability to interact positively with the public.
