The primary purpose of this organizational unit is to provide campus wide food services to students, staff, and faculty on the North Carolina State University campus. NC State Dining operates (4) dining halls, (3) food courts, (3) fine dining restaurants, (11) cafes, (6) convenience stores, campus concessions, vending, and catering department. The department employs approximately 1200 temporary and student employees throughout the academic year, and approximately 150 SHRA & EHRA employees.
The Purchasing Specialist has the primary purpose to develop, implement, and operate the food and supplies purchasing requirements for NC State Dining, using a computerized food production system (C-Bord). Food service management experience is necessary in understanding the complexities of menu development, product evaluation, and recipe certification.
The Purchasing Specialist coordinates $11 million in food purchases and $3 million in supply purchases annually. This position will work to ensure lowest costs and maximize the buying power and rebate program, which saves the university and department significant dollars annually.
The Purchasing Specialist is the C-Bord administrator and oversees the system and its use for forecasting product needs and procurement, and also trains department personnel on use of the system.
This Purchasing Specialist is an important member of the Dining Leadership Team and collaborates with all levels of dining employees.
Minimum Experience Required:
Bachelor’s degree; or Associate’s degree and two years of related experience; or an equivalent combination of training and experience.
Preferred Experience, Skills, Training, Education:
Expert knowledge of C-Bord food production system and ability to update software as needed.
Ability to learn new software and instruct others.
Knowledge of state procurement policies.
Bachelor’s Degree, Registered Dietitian, Food Science, Business or Nutrition is preferred
2-3 years of food service procurement experience preferred in a university or college environment.
Department Required Skills:
Expert knowledge of computerized food service production. Ability to learn new software features and configure the system for optimal performance.
Exceptional knowledge of food service and inventory for dining units. Must have knowledge of volume buying, inventory management and the impact of changes of product, nutritional value of recipes, impacts on plate cost, and customer acceptance.
Provide menu management onboarding to all new managers, facilitates meetings with Food Production System super users, develops and implement training needs for the department. Requires skills to effectively teach, train, and support other users.
Ability to negotiate with vendors and maintain effective and productive relationships.
Knowledgeable of food service distribution, manufactured foods, and has a wide breadth of food categories, such as fresh produce, seafood, proteins, dairy, frozen and non food supplies, including local and sustainable sourcing of food products and advises on matters related to that.
Working knowledge of USDA, food grading, HACCP (Hazard Analysis and Critical Control Point), inventory maintenance and food safety guidelines and best practices.
Ability to lift up to 30 pounds occasionally, with or without reasonable accommodation.
