Aztec Shops, Ltd., founded in 1931, is a non-profit corporation that functions primarily as an auxiliary of San Diego State University. As a "self-sustaining" non-profit SDSU auxiliary, Aztec Shops operates without subsidy from the University or the State.The corporation manages a diverse portfolio of services including operation of the SDSU Bookstore, SDSU Dining, SDSU Conference Services, SDSU Licensing, and Commercial and Residential Real Estate properties surrounding campus.

In Fiscal Year 2018 (ending June 30, 2018), Aztec Shops directed $4.1 million to the University through rent, cost recoveries, commissions, and overhead. In addition, Aztec Shops contributed $765,000 to Campus in unrestricted allocations ($310,000 to the University; $55,000 to SDSU Associated Students; $400,000 in incremental funds as called for in the Strategic Plan).



SUMMARY: Manages approximately 2 – 20 employees in event operations. Responsible for the overall direction, coordination, and evaluation of event. Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws. Additional responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work, appraising performances; rewarding, coaching and disciplining employees; addressing complaints and resolving problems.

  1. Manages and develops Catering staff, which includes disciplining of employees, setting work priorities, conducting pre-shift meetings, coordinating training, evaluating performance and directing work assignments to meet client expectations.
  2. Implements day of event plans to achieve a positive outcome of events.
  3. Makes daily adjustments to load lists and itineraries based on customer needs and immediately informs Senior Manager and General Manager of any customer issues or complaints.
  4. Plans and prepares load lists and itineraries based on customer needs and immediately informs Senior Manager and General Manager of any customer issues or complaints.
  5. Plans and prepares all appropriate event paperwork including but not limited to diagrams, pull sheets and required permits.
  6. Plans and prepares event schedules and assigns employees to specific duties and tasks.
  7. Manages alcohol for events including checking in/out, inventory, sales and supervising guests and staff during functions involving alcohol.
  8. Promotes future sales opportunities at events.
  9. Develops and maintains working relationships with customers, coworkers, vendors, student organizations, faculty, staff, and University personnel.
  10. Responsible for ensuring continued compliance with all local, state and federal health, safety and employment laws and regulations.
  11. If responsible for a licensed operation must adhere to company’s systems, guidelines, and standards.
  12. Other duties as assigned.

Required Qualifications

Minimum Requirements


The minimum requirement for applicants is an A.A. degree from an accredited two or four-year college or university in Hotel/Restaurant Management is preferred but not required; plus a minimum of two to three years manager experience in high volume catering operations with 2+ years experience with planning and executing all levels of catering events; and one to two years supervisory experience; or equivalent combination of education and experience.

Strong communications, customer service and computer literacy are required.

Food Handler certificate from California and valid California state drivers license are required.


LANGUAGE SKILLS: Must be able to read, write and understand English. Requires the ability to follow verbal and written instructions, guidelines and objectives. Requires the ability to read, comprehend, analyze, and interpret general business information, governmental regulations, and technical/trade journals. Requires the ability to write reports, business correspondence, and procedure manuals. Requires the ability to effectively present information and respond to questions from employees, subordinates, vendors, other departments, customers and the general public.

MATHEMATIC SKILLS: Requires the ability to calculate figures and amounts such as discounts, portions, percentages, and volume. Ability to apply concepts of basic math. Requires the ability to prepare and analyze numerical figures, create and interpret spreadsheets.

REASONING ABILITY: Requires the ability to apply common-sense understanding to carry out general written or oral instructions. Must be able to multi-task, prioritize work and pay attention to detail. Requires good analytical, quantitative skills, organizational and management skills.

MANUAL DEXTERITY: Must have average levels of eye/hand/foot coordination. Must be able to utilize a computer. Requires the ability to use a variety of office machines and food service equipment.

PHYSICAL DEMANDS: Basic understanding of company vehicles and unit specific equipment operations. While performing the duties of this job, the employee is frequently required to stand for prolonged hours; use hands to touch, handle, or feel objects, cooking tools, or control; and reach with hands and arms. The employee must be able to (frequently) move, lift or carry heavy objects or materials up to 50 pounds. Specific visual abilities required by this job include close vision, peripheral visions, distance vision, and color vision.

PHYSICAL COMMUNICATION: Must have the ability to talk (expressing and/or exchanging ideas by means of spoken words) and hear (perceiving sounds of nature by ear).

WORK CONDITIONS AND HAZARDS: Work is regularly performed in a food production area (that may be dimly lit) with exposure to wet and/or humid conditions where there is frequent exposure to food fumes or airborne particles. The employee occasionally works near moving mechanical parts and is occasionally exposed to humid and hot conditions as well as cleaning chemicals. There is some risk of occasional exposure to toxic or caustic chemicals and gases, outside weather conditions, extreme cold or heat and loud noises.
