Virtual Town Hall: Allergens and Special Diets

As students continue returning to campuses across the country, quarantine and isolation meals remain hot topics. Meeting special dietary needs and allergy requirements can be a challenge while serving in these new circumstances. Join NACUFS for a Virtual Town Hall to discuss, and learn more about the following:

  • What technology is used to serve students with allergies and special dietary needs in isolation and quarantine housing?
  • How are dietitians involved in this process?
  • How do you maintain an inclusive menu for those with special dietary needs in quarantine and isolation housing?
  • Do you have a process to welcome students and collect information such as their allergens?

 

Panelists:

Ashley Foster, assistant director of culinary nutrition and risk management, Virginia Tech

Gail Mitchell, chef nutritionist, Villanova University

Tara Sanders, assistant director – nutrition and sustainability, Oregon State University

 

The panelists would like to hear your questions and be able to address them during the Virtual Town Hall. Please submit your questions no later than Wednesday, March 10, 2021, on NACUFS Connect or to Jenna Goins, content & community manager, at JGoins@NACUFS.org. Additionally, you will have the opportunity to ask questions during the Virtual Town Hall.
